CHORIZO SOFT TACOS
Serves: 4 entrée portions
Ingredients:
1 pound fresh chorizo sausage
1¼ cups
chunky salsa
8 (6 to 7-inch) flour
tortillas
1 cup shredded Mexican cheese
blend
1 cup chopped tomato
½ cup chopped
onion
½ cup sour cream
1 cup shredded
crisp lettuce
½ cup cilantro leaves
Directions:
1. Over medium heat, squeeze sausage from
casings into a large heavy non-stick
skillet. Cook, breaking up sausage, with
back of a wooden spoon, into small
pieces. Cook until sausage is
brown. Drain all fat.
2. Reduce heat
and stir salsa into cooked and drained
chorizo. Gently simmer for 2 to 3
minutes.
3. In another heavy ungreased
skillet, heat tortillas, one at a time over
medium heat, about 10 seconds per side, turning
with tongs. Remove from skillet and cover
with clean towel to keep warm.
4. Spoon
about 1/3 cup sausage mixture down center of
each tortilla. Top each with cheese,
tomatoes, onions, sour cream, lettuce or
cilantro. Fold each in half and serve
immediately.
