Mount Vernon Cherry Chutney
Yield: 1 ½ cups
1 cup fresh* dark sweet cherries, pitted and
1/3 cup chopped yellow bell pepper, seeds removed
2 tablespoons minced sweet onion
¼ teaspoon lime zest
2 teaspoons freshly squeezed lime juice
2 teaspoons minced jalapeno, seeds and ribs removed
½ teaspoon dried mint
1/8 teaspoon salt
- In a medium bowl, mix all ingredients together. Cover and chill for about 2 hours.
- Serve 2 tablespoons cherry chutney atop cooked hot dogs in a heated bun.
*NOTE: Frozen dark sweet cherries may
be substituted for fresh. If using frozen
cherries, allow them to thaw and then mix with
remaining ingredients. Drain extra liquid just
before serving. Fresh cherries may be chopped
in a food processor.
