Chorizo Soft Tacos

Serves: 4 entree portions


1 pound fresh chorizo sausage
1 cups chunky salsa
8 (6 to 7-inch) flour tortillas
1 cup shredded Mexican cheese blend
1 cup chopped tomato
cup chopped onion
cup sour cream
1 cup shredded crisp lettuce
cup cilantro leaves


  1. Over medium heat, squeeze sausage from casings into a large heavy non-stick skillet.  Cook, breaking up sausage, with back of a wooden spoon, into small pieces.  Cook until sausage is brown.  Drain all fat.
  2. Reduce heat and stir salsa into cooked and drained chorizo.  Gently simmer for 2 to 3 minutes.
  3. In another heavy ungreased skillet, heat tortillas, one at a time over medium heat, about 10 seconds per side, turning with tongs.  Remove from skillet and cover with clean towel to keep warm.
  4. Spoon about 1/3 cup sausage mixture down center of each tortilla.  Top each with cheese, tomatoes, onions, sour cream, lettuce or cilantro.  Fold each in half and serve immediately.
