Healthy Make-over Mediterranean Sausage and Linguini

Yield: 4 entrée portions

1 pound mild Italian lean turkey sausage, casings removed if necessary

1 teaspoon minced fresh garlic

1 Tablespoon minced fresh shallot

1 (14.5-ounce) can No-Salt Added diced tomatoes

1 (8-ounce) can No-Salt Added tomato sauce

1 Tablespoon dried basil OR 3 Tablespoons fresh basil

1/16 teaspoon crushed red pepper

1/8 teaspoon salt

1/4 teaspoon freshly ground black pepper

12 ounces dry whole grain linguine

Fresh basil leaves for garnish


  1. In a large, heavy nonstick skillet, over medium heat, cook sausage, breaking sausage into small pieces with a wooden spoon.  Cook until no longer pink.
  2. Add garlic and shallot, sauté for 1 minute. Stir in tomatoes with juices, tomato sauce, herbs, crushed red pepper, salt and pepper. Simmer about 5 minutes.
  3. Meanwhile, cook linguini (in non-salted boiling water) according to al dente package directions.  Drain pasta and divide evenly among four pasta bowls. Top with sausage mixture.
  4. Garnish with fresh basil leaves. Serve hot.
