kielbasa with apples and red cabbage

Yield: 5 entrée servings with about 3 ounces sausage per serving

1 teaspoon canola oil

14 to 16 ounces fully-cooked turkey kielbasa, sliced on the diagonal into 1/2-inch circles

1/2 cup chopped red onions

4 cups OR 1 (8-ounce) package shredded red cabbage

1 cup apple juice

1 Tablespoon honey mustard

1 Tablespoon brown sugar

1/2 teaspoon dried thyme

2 medium tart red apples, cored and chopped

2 cups hot cooked rice


  1. In a large, heavy nonstick skillet, heat oil over medium heat.  Add sausage and sauté until light brown, stirring occasionally.  Add onions and cook 1 to 2 minutes.
  2. Stir in all remaining ingredients, except apples.  Mix well.  Gently stir in apples.  Reduce heat, cover and gently simmer 10-12 minutes or until apples are crisp tender and sausage is hot throughout.
  3. Serve over hot rice in shallow soup/pasta bowls.
