NEW! Blizzard Sausage Jambalaya
Portion: 4 entrees
1 pound Summer Sausage, cut into 1⁄4 inch slices
1 cup chopped red onion
1 cup chopped green pepper
1⁄2 cup chopped celery
1 1⁄2 cups long-grain white rice
1 1⁄3 cups low-salt chicken broth
1 15-ounce can stewed tomatoes, (Cajun recipe preferred)
1 tsp. vegetable oil
1⁄2 tsp. thyme
1⁄4 tsp. cayenne pepper
1⁄8 tsp. ground cloves
- In a saucepan and add onion, green pepper
and celery and oil. Saute over moderate-high
heat, stirring occasionally until onion is
- Stir in the sausage, rice, chicken broth,
tomatoes with their juices, herbs and spices.
Cover pan and simmer over low heat for about 10
minutes until all the liquid is absorbed and
rice is tender.
- Serve immediately in shallow bowls.
